In this video, Obi, host of the Middle Eats YouTube channel, shows us how to prepare chorba, a Libyan soup made with lamb and mint that has a truly nourishing taste. In the Middle East, it’s one of the most popular soups to consume over Islam’s Ramadan month of fasting, prayer, reflection and community.
Traditionally, the soup is made with lamb, but you can substitute thinly-sliced beef, as it pairs wonderfully with the chickpeas, tomatoes and bright, chopped parsley and dried mint flavours.
Squeeze some lemon juice over the soup before serving, and tuck in. It’s great as a meal year-round, but especially on a cold weather day. Enjoy!
