In this video, Chef John Mitzewich, host of the ever-popular Food Wishes YouTube channel, prepares a delicious honey mustard roast chicken recipe, while also demonstrating a very useful technique for cooking poultry: spatchcocking.
Spatchcocking allows the chicken to remain flat as it roasts, ensuring everything cooks evenly, so the breast meat ends up just as juicy and succulent as the dark meat.
Meanwhile, the honey mustard marinade adds incredible flavour, while also acting as a sweet and tangy basting and serving sauce.
You can serve this dish with roast potatoes and Brussels sprouts, although it pairs well with a range of other sides, too. Either way, it won’t take long to disappear off the plate. Enjoy!
